Easy Shredded Chicken Tacos!

I am alllllllll about easy recipes on a weeknight or even for meal prepping for the week! These shredded chicken tacos are SUPER easy and SUPER tasty!
One of the best parts of this recipe is that there really is very little prep work at all. Simply add all the ingredients to a pressure cooker and set it and leave it!
Once you taste these, it will easily become one of your go to easy recipes that your friends and family will LOVE!
what you will need
Other than the regular basic stuff, like a cutting board or knife, to prepare... you will need to have a pressure cooker! The one I use and recommend is the Instant Pot! See below link where you can buy on Amazon!

2 lbs Skinless, Boneless Chicken Breast
1 16oz Jar of your favorite salsa (we used Kroger's traditional salsa)
1 Tbsp Pepper Plant seasoning (buy on amazon here: https://amzn.to/3ClvUjf)
2 Tbsp Mexican Oregano
1/4 cup lite beer (we used Corona)
Salt & Pepper to taste
instructions & recommendations
Salt and Pepper the chicken breast (go light on the salt)
Spray the inside of the instant pot with non-stick spray
Add chicken, salsa, pepper plant seasoning and Mexican oregano to Instant Pot
Add beer to salsa jar and swirl around to get the remaining salsa from the jar and poor in Instant Pot (you can drink the rest of the beer... we wont tell!)
Put the lid on the Instant Pot, make sure it is sealed, click "manual" and set the time to 15 minutes
When the time is up, let the pressure release naturally for 10 minutes
Release any remaining pressure, open the Instant Pot and take out each breast and shred individually with 2 forks.
Add the chicken breast back to the sauce in the Instant Pot and set to "sauté"
Bring to a simmer and let cook, stirring occasionally, for another 2-3 minutes.
Add chicken to a serving bowl and serve!!
Pepper Plant is one of our favorite seasonings for this, and we really think it makes this recipe. But if you aren't able to get it, you can simply use cumin and chili powder.
The beer is just an added touch and brings a bit more moister in the mixture to cook. If you prefer, you can use water or chicken broth instead.
We serve this on flour tortillas but you can use corn if you would like. Just cook the tortilla slightly directly on the stove top, or in a pan with a bit of oil.
That's it! We top it off with our favorite Corn & Papaya Salsa, but feel free to add a bit of cilantro, maybe some avocado or just by itself and ENJOY!
